The owner of Kelly O’s said she buys around 8,500 eggs every week for her three locations. That’s around 50 cases, each holding 15 dozen eggs. Each egg costs around 60 cents. The diner used to pay under $40 per case.

As the bird flu spreads, egg prices are rising and that has local diners scrambling. “We don’t have eggs, then we don’t have any business. We sell eggs open to close,” said Benny Barbieri, owner of The Old Serpico’s Diner in Syracuse.
